045 (1024x683)So I’ve baked with butternut squash, have eaten lots of courgette and still need to try parsnip but the vegetable I chose to bake with this time was beetroot. I’m quite late jumping on the whole chocolate and beetroot cake bandwagon however it has always  been one of the recipes I’ve wanted to try and just never got round to doing. Therefore with a birthday coming up at work and knowing my work mate liked chocolate I found it as a perfect excuse to bake a chocolate and beetroot cake. When thinking about cakes and their lovely sweet delicious ingredients the thought of adding a vegetable to the mix doesn’t immediately sound that appealing, however due to be it good marketing, word of mouth or just wanting to try out something a bit different, vegetables in cakes has really taken off and now in pretty much all cake shops, cake parties or amazing cake events it’s pretty much guaranteed you’re going to see a vegetable cake that isn’t just carrot. Good Food Bakes & Cake Show

To celebrate the first ever BBC Good Food Bakes & Cakes Show sponsored by Lexus, the organisers are launching a Show Competition, giving visitors the chance to meet the Queen of Baking Mary Berry at a delicious Afternoon Tea.

The BBC Good Food Bakes & Cakes Show Competition gives home bakers the chance to reveal their hidden talents and show what they can do. The competition will consist of two categories: The first is Bakes, which calls for pies, pastries, breads, biscuits, or anything else baked that isn’t cake. The second is Cakes, which calls for any kind of cake decorated in the spooky Halloween theme.

Each category is open to both adults and juniors (aged under-16), with the four winners being chosen by expert baker judges John Whaite and Eric Lanlard and announced live at the event on Saturday 25 October.

Not only will the winners of each category (one adult, one junior winner) enjoy a delicious Afternoon Tea for themselves and a guest, they will also win a Kenwood kMix Stand Mixer, and meet Mary to have a copy of her latest book personalised.

For a chance to win, applicants must fill in the entry form on the show website, http://www.bbcgoodfoodbakesandcakesshow.com by Friday 26 September. They will need to describe what the entry will look like, the techniques involved and (for the Bakes category) the flavours or ingredients used. It’s recommended that entrants also include a sketch or photo to support their entry. All shortlisted entrants will be notified by Friday 3 October, and will be invited to attend the show and bring their Bake or Cake for judging on Saturday 25 October.

The brand new BBC Good Food Bakes & Cakes Show will be packed with baking, bread making and cake crafting demonstrations, free master classes, and hundreds of products to get visitors baking like a pro. Every ticket includes a seat in the Bakes & Cakes Theatre, where visitors can see Mary Berry, Mich Turner, John Whaite, Paul Hollywood, Eric Lanlard, Lisa Faulkner and other expert bakers sharing the tips of their trade and baking live.

Macaroons- what comes to mind? I’m guessing the colourful pastel cakes you’ve previously seen being made on Bake off or in the windows of French Patisseries. However last weekend I came across a different form of macaroon and this was the plain coconut one made from desiccated coconut, sugar and egg. I came cross this delightful treat at a market up in Barnsley. Served warm at the cost of £1 or 3 for £2.50 I can honestly say I savoured every bite. Cripsy on the outside, sweet and melt in the mouth on the inside I simply couldn’t get enough of them. Therefore as soon as I was home I was already searching for a recipe on how to make them.

On searching the net I came across several different recipes, some using condensed milk, others using chocolate and cream however the one I opted for uses quite simple ingredients and is a fabulous recipe if you want to just whip something sweet up at the drop of a hat.

Ingredients

100g Desiccated Coconut
90g Caster Sugar
2 egg whites
1tsp vanilla extract
1 tbsp plain flour

Method

1) Preheat the oven to 160C/fan. Line a baking tray with grease-proof paper. Mix the coconut, sugar, flour and vanilla extract into a bowl together until combined. Next add the egg whites pouring slowly so it is absorbed into the mixture and mix together until you have a slightly sticky mixture.

114 (1024x683) 2) Using a spoon, dollop the mixture on to a baking tray and shape he mixture into small dough ball shapes. Bake in the oven for 15 mins, the tops will turn a golden brown colour but make sure not to overbake. 116 (1024x683) 119 (1024x683)

These macaroons have become a household favourite and since first baking them I have made 4 more batches. I can’t believe I’ve never tried them before. They are fabulous for an after dinner treat and served best warm. So far I’ve had them plain but they’d be fabulous dipped in melted chocolate so I might just have to try that next. Enjoy!

A taste of Georgia at Marani, Mayfair

Last Thursday night was my first blogger’s meet up with Zomato and it was held at the beautiful hand decorated Georgian restaurant, Marani, based in Mayfair. On arrival I was given a tour of the restaurant and informed about the Georgian artist who came over from Georgia to paint and curate the restaurant in the space of 6 months. The restaurant was decorated with beautiful paintings, chandeliers made from wine glass bottles and intricate crafted candle sticks and was simply stunning yet extremely homely at the same time. The staff were extremely attentive and polite and guided me to our table upstairs which was beautifully presented and allowed me the opportunity to sit down and meet with other bloggers. It wasn’t long before food was brought out which consisted of, Elarji & Bazhe (polenta & cheese balls with an almond dipping sauce), Chkmeruli (corn-fed grilled baby chicken in a garlic & cream sauce) as well as Georgian breadsticks and a delicious light and zesty cucumber and tomato salad. Foodies Festival 2014 – Kenwood House

Kenwood House was home to Foodies Festivals for the first time last weekend which gave the opportunity for all foodies to come and sample delicious wine, healthy snacks, zebra, macaroons and much much more. The number 1 summer food and drinks festival we couldn’t have picked a better day to go. The sun was out in full as we arrived on the beautiful grounds of Kenwood and made our way around the different stalls.

We started at the top of the hill where there were a few stands situated just behind Kenwood house which included the master chef bus and lots of stalls selling gin! A particular favourite was one called  the summer cup which for someone who has never been  a lover of gin definitely made me change my mind. Bursting with fruity flavour it reminded me of pimms but with a tangier taste. After sampling a mix of gins and even fresh strawberry champagne we were definitely in the mood for food so wandered down to the main area to see what they had in store.

The mixture of smells hit me right away, from hog roast, to crispy duck, paella and morrocan tagine, there was definitely a fine variety of cuisines to try. I was quite keen to have a wander around, sample a few things before buying, however Craig’s rumbling stomach signalled he wanted food and was on a mission to find it. A lover of duck he was easily pleased when he came across The Duck Truck stall. They had a relatively big que which I usually take as a sign that the food has to be good and it didn’t disappoint. Craig opted for the duck wrap which was crispy shredded duck marinated in a hoisin sauce with lettuce and wrapped up in a tortilla. Again I don’t tend to eat a lot of duck from having a bad experience eating it when I was younger but I ended up eating almost half of Craig’s wrap!

When I told people these cupcakes were made using butternut squash as the main ingredient I received some pretty mixed responses. But seriously these are incredibly delicious and can even count towards one of your five a day (don’t quote me on that). I made them last week for a friends birthday and they went down a treat. The recipe does call them pumpkin cupcakes and pumpkin would’ve been my first choice, however as it’s May and my local supermarket had limited supplies I opted for butternut squash instead. Having tried courgette and beetroot cakes I’m not surprised that vegetables are being used more and more in cakes. They add sweetness and make the texture lovely and soft.

The prep time for these cakes suggests 15 minutes but I would change that to 40. I don’t know about you but a butternut squash for me takes 15 mins alone to cut up never mind grating too. Once you’ve got that out of the way however the rest is quite a doodle.

I doubled the recipe as I wanted to make 24 cakes. Thankfully this worked out with no problems, however in the past I have had cases where I’ve doubled the recipe and it just hasn’t gone to plan. I used more icing sugar for the toppings than the recipe said which made them slightly sweeter.

Here’s the recipe:

Ingredients

  • 175ml sunflower oil
  • 175g light muscovado sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 200g coarsely grated pumpkin or butternut squash flesh
  • 100g sultanas
  • grated zest 1 orange
  • 2 tsp ground cinnamon
  • 200g self-raising flour
  • 1 tsp bicarbonate of soda

For the frosting

  • 200g tub full-fat cream cheese
  • 120g icing sugar

1. Heat oven to 180C/160C fan/gas 4. Line a 12-hole muffin tray with paper cases. Pour the oil into a large bowl and add the sugar, eggs and vanilla. Beat together, then add the grated butternut squash, sultanas and orange zest.

103 (1024x683) (2)2. Stir in the cinnamon, flour and bicarbonate of soda, the mixture will be quite wet. Spoon into the cases.111 (1024x683) (2)3. Bake for 25 mins until firm and springy to the touch and a skewer inserted in the centre of a cupcake comes out clean. Cool completely on a wire rack. At this stage you can freeze the cakes for 4 months.118 (1024x683)116 (1024x683)4. To make the frosting, beat the cream cheese and sugar together until smooth then spread on top of the cupcakes. Store in the fridge, but return to room temperature to serve for the best flavour and texture.

Easter Celebration Cakes for Cake Club’s first Birthday!

Last Monday was Easter celebration theme for Clandestine Cake Club. This was to mark not only Easter just happening but to mark Camden’s first year as a club! Since 12 months ago the club has gone from having only 3 members to over fifteen!

It was a smaller turn out this time as there were upcoming holidays and a certain wedding dress to be fitted into. Also it did fall very close to Easter so perhaps some couldn’t deal with eating more sweet things so soon after.

Despite this there was still a good turn out and some varied and delicious cakes to try. We met at a lovely little pub just near Mornington Crescent called Simmons. I have walked past it hundreds of times and never noticed it but it is situated on the corner and serves wine for the bargain price of £2.50 and tasty wine at that! It also is a lot bigger than it looks and even has an old school nintendo where you can come and play mario supercars.

I wasn’t sure what to bake this time round so opted for a cake that was actually called Easter Celebration Cake (very apt) which was featured in Woman and Home Magazine. I loved the look of the cake as soon as I saw it with its four layers however I do tend to make chocolate cakes a bit too often so was a little undecided. The good thing about this cake it that although it looks extremely chocolately it is a vanilla sponge with hints of orange and almond which make it not too indulgent but give a lightness to it.

Here’s how it’s made:

Ingredients

  • 350g (12oz) unsalted butter, at room temperature
  • 350g (12oz) golden caster sugar
  • 6 large free-range eggs, beaten
  • 400g (14oz) self-raising flour, sifted
  • 100g (4oz) ground almonds
  • juice and grated zest 2 oranges

for the chocolate fudge filling

  • 250g (9oz) plain dark chocolate
  • 100g (4oz) butter
  • juice 1 orange
  • 3 free-range egg yolks
  • 250g (9oz) icing sugar

for the topping

  • 300ml (½pt) double cream
  • 3tbsp caster sugar
  • 200g (7oz) dark chocolate, finely chopped
  • chocolate eggs, to decorate

you will need:

  • 2 x 23cm (9in) round cake tins, lightly oiled and bottom-lined with baking parchment

PREPARATION

  1. Heat the oven to 170 C, 150 C fan, 325 F, gas 3. Cream the butter and sugar together, until pale.006 (1024x683) - Copy

  3. Spoon the mixture into the cake tins and bake for 45 minutes, until risen and firm. Remove from tins and cool on a wire rack.022 (1024x683) - Copy
  4. Meanwhile, make the fudge filling. Melt the chocolate and butter, and mix with the orange juice. Cool for 5 minutes, then whisk in the egg yolks and icing sugar in batches.031 (1024x683) - Copy020 (1024x683) - Copy
  5. For the topping, heat the cream and sugar in a pan until steaming. Pour over the chopped chocolate in a bowl, and stir to combine. Cool for 10 to 15 minutes.039 (1024x683) - Copy
  6. When the cakes are cool, cut both in half horizontally. Spread one cake layer with a third of the filling, top with another layer of cake and spread with a second third of the mixture. Add a third layer, spread with the rest of the filling, and top with the final layer.029 (1024x683) - Copy

The sponge was very simple to make. The only thing I did wrong was not level out my mixture as best as I could so when the sponge was baked they were very lopsided! I tried to rectify this when cutting the layers but it still turned out pretty wonky!

Thankfully the cake went down well at the club and was a pleasant surprise to Jelena as she wasn’t expecting the orange flavour. I liked it but as I made it on Saturday, by Monday I felt that the sponge had got a bit dry so in future I will try and keep it in a better airtight tin.

Debs made an Easter battenberg cake which despite my dislike of marzipan I still managed to scoff the whole slice. Jelena’s creamy caramel cake was melt in your mouth delicious. Beautifully presented too it was easy enough to keep coming back for more. I also loved Mel’s cake as it contained two of my favourite ingredients, banana and coconut. She also only baked it a few hours before the event so the sponge was still soft and moist.

Our next cake club theme is Eurovision which should be pretty fun! I better start thinking what to make, something cheesy I suppose!

Cinnamon Rolls make for a Happy Easter!

Every year I give up chocolate for lent as it is only the time of the year I can ever do it! It’s funny how our minds work and when set with certain challenges we can manage to accomplish them whereas with others we just can’t find the motivation!

I was actually looking forward to the challenge this year which sounds a bit odd but I had realised I had started incorporating chocolate in to every day and even sometimes just having it because it was there rather than actually wanting it. I was also snacking on it at night occasionally which isn’t always great for the waistline! So with the promise of lent in mind and giving up something I enjoy I went fully into it and managed to give up not only chocolate, but sweets and cake too (I found I actually missed pic n mix and cake the most as well as baking!) I’m excited to be getting back into that again for sure.

Therefore with Easter only a couple of days away, on Friday with my day off work, I decided to make some cinnamon rolls! I couldn’t eat them until today but risked making them as unlike baking with chocolate I wouldn’t be so tempted to pick as I went along! I actually found the recipe for this on a blog I love, however the measurements I followed really didn’t work for me so I’m changing them so that for you the recipe will turn out hopefully better than mine did! Here it is:

For the Rolls
  1. 8oz strong bread flour
  2. 12oz plain flour
  3. 10oz natural yogurt
  4. 2 tablespoons sunflower oil
  5. 2 tablespoons granulated sugar
  6. 1 7g sachet instant yeast
For the Filling
  1. 2oz unsalted butter (very soft)
  2. 2 tablespoons cinnamon
  3. 1oz granulated sugar
  4. 1oz soft brown sugar
For the Icing
  1. 2oz quark
  2. 1/2 cup icing sugar
  3. 1 tablespoon maple syrup

(I didn’t love this icing and in future think I will try cream cheese and vanilla essence as the icing was a bit too tangy for my liking but give it a go and see what you think!)

Method
  1. Preheat oven to 180c/Gas Mark 4
  2. Line a 16cm cake tin with baking paper.

New Spring Specials at Wahaca

Last week, with the sun shining out of the heavens, I headed to Wahaca in Islington, a five minute walk from Angel station to sample some of the new dishes that have recently been added to the menu. I have been to other Wahaca’s in the past and have always enjoyed it’s laid back feel and colourful decor and the one in Angel is similar but actually a bit more chic. There is a foosball table as you walk in to the left and different levels for where to sit. I loved that we were surrounded by plants and the quirky decorations such as the beaded door you have to walk through to go to the ladies.

Wahaca was born from a love for ‘fresh, honest, Mexcian market food’ and I love that they quote it is ‘healthy but hearty eating’. I would most definitely agree with that. You can order lots of lovely dishes but not feel too indulgent or bad about it.

The menu ranges from street food where you can order mini tacos, tostados, taquitos and quesadillas or you can choose to go for a main meal such as marinated grilled chicken, a burrito or one of their varied salads which comes in a crispy tortilla bowl.

There is a wide selection of drinks to try from soft drinks such as the passion fruit and hisbiscus cooler (highly recommend this) to something stronger such as the classic wahaca margaritas.

We took our time looking over the menu and two dishes caught our eye straight away which were the chorizo and butternut squash empanada and the crab noodles which were both specials of the day. On top of this we ordered the winter vegetable, a new addition to the menu which consisted of Savoy cabbage, mixed mushrooms and borlotti beans sautéed in a rich pasilla chilli salsa. It is then garnished with roast chipotle salsa and feta. The winter vegetable was fresh with a touch of spice to it which meant we were reaching out for our drinks, however it wasn’t overtly spicy but rather just added a tasty kick to the dish. Our final two dishes were  the sweet potatoes (always a winner) and the classic pork pibull (another popular dish). One time I came to Wahaca and ordered what I thought was the sweet potatos but when the dish came it was the Sweet potato & feta taquito. Although still flavoursome in its own way I was a bit disappointed. The sweet potatoes  with caramelised onion accompany the other dishes so well and the sweet flavour is incredible moreish .

With hardly any leftovers I can say that five dishes between two turned out to be plenty and is also a really great number in being able to try out a variety of dishes and flours. The three new dishes were especially good, I loved the empanada to begin with but then struggled a little to finish it as it was quite filling and heavy in comparison to the others but the flavours worked together really well. One of my favourite soups is chorizo and butternut squash so I am pretty much sold every time I see a dish containing the two.

If you haven’t been to Wahaca yet I would highly recommend it, a relaxed atmosphere, reasonably priced, varied delicious drinks menu and fantastic selection of food, you won’t leave feeling disappointed.
