I know Craig was secretly dreading it because he loved Las Vegas so much and wanted to stay in the heat but I was super excited to be going as had heard so many great things about it. We arrived around 6p.m and luckily our hostel wasn’t too far from the station. We did go around in circles a little bit before getting there but we made it in the end. Our hostel,  Hi International, was located on Mason Street, therefore a good spot for getting around. We had booked a private room and when we saw the room it was a really small room with a double bed and then a bed on top. I could just see Craig’s face drop as we had gone form having two double beds and a bathroom to a small kind of dingy room for the same price. I’m quite used to hostels so didn’t mind too much but yes it wasn’t quite as fancy. We both thought the bed on top was pretty funny plus there were bars at the end of the bed so Craig was too tall for it!

Moving to Vancouver!

So I’ve been talking about it for the past 4 years (on and off) and now I’m finally doing it. I’m moving to Vancouver! Even just typing it out still doesn’t make it completely real in my head but it is actually happening. My flights are booked, I’ve handed my notice in at work and have started looking at places to explore and possibly move to as well as started to realise I’ve got a lot to do!

I’ve always been the kind of person who works best under pressure and I’m using that as my excuse for getting everything done in the last few weeks but the truth is I only fully decided I was definitely going to do this a couple of months ago.
rainforest-vancouver-island-canada_I applied for the visa last year before I started a new job and then found I wasn’t ready to leave, plus I have strong ties here, a great bunch of friends, family and a boyfriend of 3 years who I love. Therefore why go? The truth is going to Canada has been something I’ve wanted to do since I landed back in the UK after 7 months of travelling 5 years go.
I had some of the happiest times of my life on the road exploring different countries and meeting new people. I spent two months travelling around Asia, eating some of the best food I’ve ever had, meeting incredible people and seeing stunning scenery. In Australia I fell in love with Melbourne and Byron Bay where I lived in a caravan and worked at the local market selling coffee which was brewed less than a few hundred feet from where I slept. In New Zealand I pushed my fear level through a threshold (I’m not sure I would do today) skydiving over Franz Joseph at sunrise, bungee jumping 134m and hiking up mountains where I saw the most incredible scenery not even a camera can do justice in Queenstown. I finished my 7 months of travelling with a 4 week adventure across America with Trek America, who I would highly recommend. Not only did we mange to go to 21 states in 21 days, breakfast in Albuquerque counting as one, but I met people on that trek who are my close friends to this day. I walked blindfolded to the edge of the Grand Canyon and opened my eyes to look across at the most breathtaking sight where half of it was covered in snow and the other half was a mix of burnt orange and sunrise colours. I danced down streets of New Orleans and ate the tastiest cheesecake in my life in Juniors in Times Square. I went hiking in national parks, ate hot dogs at a baseball game in Texas and stepped into Elvis Presley’s grand mansion, Graceland, in Memphis and quite simply had the best time of my life.

Scrumptious Savouries for the Clandestine Cake Club

Polenta, Ricotta, Prosciutto & Tomato CakePolenta, Ricotta, Prosciutto & Tomato CakeOn Monday night I went to my first Clandestine Cake Club event and it was such a fun evening! I first came across the Clandestine cake club when I attended the cake and bake show back in September. I thought it was a fantastic idea and couldn’t wait to attend one. The Club was founded in the summer of 2010 by Lynn Hill who thought there needed to be more events out there which involve a chance to meet and talk with others and eat cake! The club has proved to be a great success and what started as one club has now led to over a hundred clubs being formed.

To take part in a cake club event you need to register on their website http://clandestinecakeclub.co.uk/ and then can look and see what club is in your area or if there isn’t one you can set one up! The idea is that each individual must bake a cake and bring it to the event so that everyone can meet, mingle and share a slice of each other’s delicious cakes. The events are held monthly and each event is held in a different venue and has a different theme.Scrumptious Savouries In light of over indulging over the festive period, the theme for January’s Cake club was Scrumptious Savories’. I had never made a savoury cake before and it took me a while to find a cake that I fancied making. When it comes to sweet cake I spend far too long deciding which one I want to make because I have too much choice but for savoury cakes I was a little stuck. I thought of a sweet potato pie but as it’s a cake club, rules are you can only make cakes, no muffins, no pies, just cakes.019

How not to bake a cheesecake

It was the London Marathon last Sunday and as my brother was running it I thought it was a perfect excuse to do some baking as a ‘Well Done’ gift for crossing the finish line. I was looking forward to cooking dinner on Saturday but my brother informed me that he was making lasagna, a HUGE one, and that there was no need for me to cook anything. Although I do enjoy a good lasagna  I was actually quite looking forward to planning a recipe and trying out something new. It’s difficult in my house to ever be the one to cook, some people may love that, but I’ve always believed that if you never get the chance to do it for yourself, how are you going to learn? I don’t complain so much on a work night but on a weekend it would be nice to have the chance to cook more. Therefore, I decided to help with the lasagna by chopping the mushrooms and repeatedly exclaiming to Ed, “Three packets of mince!!” Despite all my moaning and best efforts to say, “not another jar of sauce” or  “lay off the cheese just a tad”, the lasagna was actually one of the best I’ve had in a long time. It definitely beat my cheesy mess of a veggie lasagna I tried to make some months back which looked more like slush than a tasty pasta dish.
